The distinct character of this coffee rests on a 32-hour anaerobic fermentation process. Following selective picking of ripe cherries and flotation sorting, the pulped beans enter sealed tanks for controlled fermentation, boosting sweetness and complexity. They are then rinsed in clean water for a crisp, bright profile before being slowly dried on raised beds over 25 days to lock in their aromatic balance.
