ORIGIN

This coffee is produced in the Planadas region, in the heart of Tolima. These farmers grow their coffee on protected land rich in biodiversity, with over 6,000 trees per hectare. Each family cultivates between 2 and 4 hectares, respecting their land, traditions, and the environment.

The terroirs of Planadas and Gaitania, located between 1,700 and 2,000 meters above sea level, offer ideal conditions for growing Arabica. The local varieties—Red Caturra, Colombia, Castillo, and Typica—are hand-picked between May and July, then naturally dried in greenhouses to ensure high cup quality.

This coffee embodies the commitment of indigenous communities to a resilient agriculture that respects nature and traditional knowledge.

PROCESS

This coffee was decaffeinated in Colombia at the Decaf plant in Manizales, using the Sugar Cane Decaf process (or SC Decaf). This natural method uses ethyl acetate derived from sugarcane to extract the caffeine while preserving the bean's aromatic qualities. It is one of the few low-impact decaffeination methods, yielding a sweet, aromatic cup with zero chemical residue.

Prior to decaffeination, this lot was certified organic. However, because the sugarcane used to produce the ethyl acetate was not certified organic, the certification could not be maintained after processing. Nevertheless, laboratory tests confirmed the complete absence of pesticides, ensuring a clean and healthy cup.
