ORIGIN

This coffee comes from the Gera region, located about 40 kilometres southwest of Jimma, Ethiopia. It is produced by Khalid Shifa, a producer committed to environmental preservation and community development.

Khalid’s farm has been run by his family for several generations, with particular attention paid to the quality of the coffee and the sustainability of agricultural practices. Coffee trees grow at an altitude of 2100 meters in a forest environment rich in biodiversity, favoring the production of complex and aromatic coffees.

Khalid Shifa is also involved in community projects, such as building roads, supporting local schools, and training farmers on sustainable farming practices.

PROCESS

This coffee is processed according to a traditional washed process. The ripe cherries are harvested manually between December and February, then pulped and fermented to eliminate mucilage. The grains are then carefully washed and dried on raised beds, allowing optimal air circulation and even drying.

The drying process is carried out on African beds, ensuring consistent quality and pure aromatic expression.
