When biodynamics invites itself into coffee
Finca Santa Isabel is located in Pueblo Nuevo Viñas, Santa Rosa, in the Nuevo Oriente region, between 1200 and 1400m above sea level. This humid region has mineral-rich volcanic soil that allows the farm's various plantations to flourish and produce the best coffee.
Alexander Keller is a 4th generation coffee farmer and he runs Finca Santa Isabel. His innovative personality and forward-thinking practices led him to switch from traditional agricultural practices to certified organic practices and then to fully biodynamic production 4 years ago.
Since taking over the operations of the farm, Alex has worked to unite the environmental and social components of the farm and to diversify its production to ensure its sustainability. The organic fertilizers are all enriched with biodynamic preparations from the farm to create a self-sustaining ecosystem that integrates all aspects of the earth. Added to this already innovative approach is Alex's passion for experimentation, constantly perfecting his fermentation methods.
This natural coffee is picked and selected before being placed in the shade on raised beds. This drying method lasts about 15 days and avoids over-fermentation of the cherries, which would bring an undesirable taste in the cup.
