Originally from the Planadas terroir, in the south of the Tolima region, this coffee is grown on a high altitude and very cloudy area. We had a real crush on this one, which is part of an organic production. Processed only by washing with fermentation, it is produced from old varieties such as bourbon, typica and caturra, something very rare today. Zen is our first decaffeinated coffee from a natural method derived from sugar cane. In Colombia, where sugar cane is produced in abundance, it makes economic sense to use this resource to decaffeinate. Molasses, derived from sugar cane, is fermented to create ethanol. This alcohol is then mixed with acetic acid to give the ethyl acetate compound used to decaffeinate.
